Ingredients

  • 2 Zucchini medium size shredded fine

  • 1 tsp Coconut Oil

  • 2 tbsp Butter

  • 1 tsp Jeera/Cumin seeds

  • 1/2 tsp Mustard seeds

  • 1 Bay leaf

  • 2 cups Basmati Rice soak for 20 minutes & drain.Set aside.

  • 4 -6 Dry red Chilies

  • 4 cups Water

  • Salt to taste

Directions

  • Warm oil & butter in a thick bottomed vessel or pressure cooker .To this add the cumin/Jeera & mustard seeds.Let them splutter then add the bay leaves & red chillies
  • To this now add the shredded Zucchini & saute for a few minutes till Zucchini turns golden yellow
  • Now add the cleaned presoaked Basmathi rice to the above mix & stir them all together gently frying the rice without breaking it.
  • Now add water to the above with salt to taste & pressure cook rice for 2-3 whistles
  • Serve it hot with any spicy curry/baked fish etc.
