Few things scream as loudly as Watermelon does about the arrival of summer. The heat is on, the local markets are filling with watermelons of all sizes and shapes.

Making my way through the crowds, I found myself standing next to the watermelon stand. Beside me stood a Mexican guy tapping the watermelon on all sides. I have heard that they are experts in picking the right watermelon, so I went up to him and requested if he could help me pick the right one.

He gladly obliged and gave me a few pointers on how to go about it the next time. Recently, I had tasted this salad at a friend’s place and was curious to try preparing it in my own kitchen today.

Yes, the Watermelon Feta Mint salad.

It is a quick and easy salad and can be served as a dessert or a starter.

The Back Story

The weather was really getting warm, I lay the watermelon on the kitchen table, carefully cutting it into half. I had set my mind on trying out this new recipe for salad. Curious as to how it will turn out, I went on to scoop the watermelon into lollipop sized pieces.

Once I was done with scooping half of the watermelon , I tried this recipe using Feta cheese and Mint and made this yummy salad.The salty creamy Feta cheese, the sweet watermelon, the citrusy lime juice, the fresh mint and the Extra Virgin Olive oil, creates a lovely summer salad.

A perfect al-fresco salad for sure ! Enjoy it with friends and family all throughout summer during cookouts and barbecue season. Your guests will be happy you served this fresh delicious salad  and will remember it for days to come.

What kind of cheese goes with watermelon?

Watermelon and Feta. This is the perfect summer snack. The freshness of the watermelon goes perfectly with the saltiness of the feta cheese.

How do you crumble a block of Feta Cheese?

The easiest way to crumble Feta Cheese is by cutting off the amount of cheese you want to crumble with a knife. Then run the feta under cold water for 10 to 20 seconds. This helps clear away any brine on the Feta cheese and firm it up. Use a fork or your hands to break up the feta into small pieces (do not mash).

Should you rinse Feta Cheese?

Feta dries out quickly when removed from its brine, so always store feta in the brine it is packed in .Do not buy pre-crumbled “dry” feta.  It’s a good idea to rinse feta packed in brine just before serving to remove excess salt.

Is Feta Cheese healthy?

Feta is a brined, white cheese with a soft and creamy texture. Compared to other cheeses, it’s low in calories and fat. It also contains a high amount of B vitamins, phosphorus and calcium, which can benefit bone health. Additionally, feta contains beneficial bacteria and fatty acids.

How do you add flavor to watermelon?

Squeeze lemon or lime juice onto watermelon for a refreshing treat. Use a knife to slice a lemon or lime in half and squeeze about 1 tablespoon (15 mL) of juice over sliced or cubed watermelon. Some people find that a boost of acidity makes the melon taste sweeter. Try adding salt and pepper to round out the flavor

Why do you put salt on watermelon?

Did you know salt has an inherent power to draw liquid? Due to watermelon’s low salt content, when you sprinkle salt on the fruit, it draws all of the watermelon’s sweet liquid to the top, creating a surplus of flavor around the point where the salt hits the fruit.

Ingredients

  • 6-8 pound 6-8 Seedless Watermelon yields 10- 12 cups , is chilled

  • 1/4 cup 1/4 Extra Virgin Olive Oil

  • 3 3 Whole limes juiced

  • 3/4 tsp 3/4 Black pepper

  • 1 cup 1 Fresh Mint leaves chopped

  • 1/2 cup 1/2 Feta cheese (preferably from Sheep milk) crumbled

  • 1/2 tsp 1/2 Salt

Directions

  • Cut rind from the watermelon. Next chop the fruit into 1 inch chunks. Place chunks in a colander so that the watermelon drain as your chop. If you prefer to scoop your melon into balls, then you may use a melon baller instead (like we did here).
  • In a small bowl, whisk together olive oil, fresh lime juice, salt, and black pepper to create a dressing.
  • Place the cut watermelon in a large salad bowl. Pour dressing and chopped mint over the watermelon and toss gently to coat.
  • Pour the crumbled feta into the salad bowl and stir gently to mix the cheese into the salad. Serve.

Notes

  • This salad is best made just prior to serving.
  • Prepare one hour or less before your plan to serve.
  • It tastes best when it’s made from chilled watermelon.
