Have you had the simple pleasure of building sand castles on the beach with your little ones, the joy of baking with your kids is similar. An idea in your head, a few necessary ingredients, the tools ( read mixing bowl and spatula) and a whole lot of fun.

It was the morning of Thanksgiving, when my kid excitedly showed me a picture of the turkey cupcake on the net, suggesting we try it. I loved the idea ,so we headed to the “one & only one” open store, that had most of the ingredients, returned home, donned our aprons & chef hats to add to the fun of it all & started our venture on baking these cute cupcakes.

It was a fun experiment, a few of the feathers of the turkey, got ruffled, imagine an 8 year old who is tasting the chocolate frosting as I’m getting the turkey to pose for the picture( head straight, beak/chin up kinda’ thing) so some turkey’s were teary eyed, since they were tired of striking the same pose repeatedly, but all in all, they turned out yummy with bright colored feathers, fluff and all.It’s not so much about the turkey , as it is about the joy of baking with your child that made it, so special.

Ingredients

  • For the cupcake:
  • Dry ingredients:
  • 1 cup 1 Baking flour

  • 1/2 cup 1/2 Sugar

  • 1/2 tsp 1/2 Baking powder

  • 1/4 tsp 1/4 Baking soda

  • 1/4 tsp 1/4 Salt

  • Wet ingredients:
  • 1/2 cup 1/2 Thick yogurt

  • 2 1/2 tsp 2 1/2 Vanilla essence

  • 1 tbsp 1 Ghee ( optional)

  • For the topping:
  • Oreos

  • Chocolate frosting ( acts like the glue)

  • Candy corns- a packet

  • Chocolate balls( for the head)

  • Icing gel ( for the eyes)

Directions

  • Mix the dry ingredients together first, set aside.
  • Now to this add the wet ingredients which are mixed together already.
  • Whisk them both together, gently for a few minutes, you can add ghee at this point, if you feel the cake needs more moisture.
  • Preheat the oven at 350 degrees for 10 minutes, before transferring your baking sheet with the cupcakes filled with your cake dough for baking.
  • Bake for 15- 20 minutes ( you should be able to check , if its properly baked when the tooth pick comes out clean after inserting it into the cupcake, after the said time)
  • Now set it in a cooling rack, for it to cool down.
  • When its cool, spread the chocolate frosting on top and place an Oreo cookie for the body, and the tail by making them stick on the chocolate frosting which acts like the glue.
  • Now for the feathers, gently twist the Oreo cookie in the tail part open & insert candy corns coated with chocolate frosting on them, so they stick and appear like colored feathers)
  • Place the chocolate ball for the head, with the chocolate frosting acting as the glue.Stick the beak with the candy corn coated with chocolate frosting too, place icing for the eyes and Voila, your turkey is all set for the Thanksgiving dinner table .Tip: You can use them as place holders, with names written on the turkey wings , for added special effects
  • Gobble…Gobble…away your way to health & fun times

Notes

  • This is an eggless cupcake recipe, one may substitute with eggs as per your liking, but I will assure you this cake turned out soft and moist, even without the eggs.
  • I had not used butter at all, only 1 tbsp of ghee for the entire mix.
  • If you do not have yogurt, you can substitute it with 1/2 cup of milk and 2 tsp of vinegar .
  • This serves 5-6 cupcakes, you can double the ingredients for more cupcakes.
  • The turkey’s might have stood with more pride showing of their bright plumage, had it not been for the chocolate frosting disappearing at regular intervals…so kindly forgive the disheveled feathers 🙂
