Spring is FINALLY here after the long cold winter, what better way to greet it at our doorstep than with fresh produce which seems abundant in this season.Gone are the days of slaving over a hot oven or stirring endless soups so your bones don’t freeze over, now is a time to add a little spring to your step….yes, roll in that “healthy food”…. after all “The day the Lord created hope was probably the same day he created Spring ” so there is always hope to switch to healthy fresh produce and go raw too…why not??

There is a crispness in the air to match the veggies that went into this Thai Spring Roll, yup, no deep fried rolls this season, but just light , fresh & healthy veggies ( cucumbers, carrots, purple cabbage, bell peppers, onions and herbs like cilantro and mint) put together in minutes kind of brunch.”Spring is nature’s way of saying, “Let’s Party” ” so throw in all the possible colors you can…bright , light & happy, wrap them tenderly with thin rice paper & Voila ! what do we have an easy breezy Spring Roll.One can have it with any dipping sauce of your choice or just plain Spring Rolls.

Ingredients

  • 4 4 -6 Rice Paper

  • 1 1 Cucumber- ( shredded)

  • 1 1 Carrots-1 ( shredded )

  • 2 2 -3 Bell peppers( different colors)- (fine sliced)

  • 1/4 1/4 Purple cabbage- (finely sliced)

  • a few a few leaves Cilantro

  • a few a few leaves Mint

  • 1 1 Onion- ( thin sliced)

  • Fresh ginger- julienned

  • 1 tbsp 1 Balsamic Vinegar/Rice Vinegar

  • Salt- to taste

  • Warm water

Directions

  • Mix all the veggies together with the vinegar , salt & the cilantro & mint leaves together & set aside.
  • Place warm water in a bowl & place the rice paper one at a time & soak it, until soft( 15- 20 seconds would do, soaking for too long would tear it )
  • Lay the wet rice paper on a flat surface.
  • Place the veggie filling on one side of the rice paper & gently roll it, taking care to fold in sides as you proceed.
  • Cut in half and serve cold.

Just the kind of fresh crunchy brunch you would like to bite into as the weather gets warmer outside and what’s more be inspired to grow the veggies in your garden.Celebrate Spring !
