It is very popular rice dish in restaurants in India. Made with stir -fried vegetables and spicy Szechuan sauce, with a deep chilly garlic flavor, this fried rice is sure to entice your taste buds.

What is Szechuan sauce made of?

Szechuan sauce is a spicy and pungent sauce. It is made with dry red chillies, garlic, onions/shallots and spices.This is one of the most popular sauce used in Indo- Chinese cuisine, similar to hot chili sauce. This sauce can also be used as a dip.

It can be home-made like in our recipe here or store- bought.



Is Szechuan Sauce vegan?

Szechuan sauce is a flavorful stir fry sauce that can be made in 5 minutes sharp.It can be used to stir fry veggies or noodles. Great as a marinade for tofu, chicken and shrimp.

The homemade version is healthy with no preservatives added to it.It is vegan and gluten free. Easily adaptable and holds good in the refrigerator for up to 10 days.



What kind of rice do Chinese restaurants use for fried rice?

The best choice for cooking Chinese Fried rice is Jasmine Rice.It makes for fluffy, sturdy grains that don’t clump or fall apart when fried.

Any medium to long grain rice works best for Fried Rice recipes. For this recipe, I used Basmati Rice, which is a long grain rice. You can use the rice of your choice, make sure it does not sticky and clump together when cooked.Use rice that is less starchy, cleaning the rice under running water, a few times before cooking helps remove starch.

How do you refrigerate rice for fried rice?

Make a batch of rice and spread it in a thin layer on a sheet tray. Put the tray in the refrigerator for 15-20 minutes (this keeps the grains from clumping), then portion out the rice into individual freezer bags. Freeze for a couple hours and BOOM—dry rice, ready for frying.

Can I use cooked rice to make fried rice recipe?

When using previously cooked rice for a fried rice recipe, the rice is stir-fried for several minutes using a small amount of oil in a large skillet or wok.This stir fried rice is then added to the vegetables to make fried rice.

Ingredients

  • 2 cups 2 Basmati Rice

  • 2 tbsp 2 Coconut Oil

  • 1 1 Red onion finely sliced

  • 1/2 tbsp 1/2 Ginger chopped

  • 1 tbsp 1 Garlic chopped

  • 1 cup 1 Carrots chopped

  • 1/4 cup 1/4 Spring Onions finely sliced

  • 1 cup 1 French Beans chopped

  • 1 cup 1 Green Bell Pepper chopped

  • 2 tbsp 2 Celery

  • For making Schezwan Sauce
  • 2 tbsp 2 Coconut Oil

  • 1 tbsp 1 Vinegar

  • 2 tbsp 2 Soy sauce

  • 1 tbsp 1 Tomato Ketchup

  • 1 tsp 1 Szechuan Pepper Corn or Black Pepper Powder

  • 1 tbsp 1 Red Chilli Powder

  • 1/2 tbsp 1/2 Brown Sugar

  • Salt to taste

  • 3-4 tbsp 3-4 Water

Directions

  • For Making Schezwan Fried Rice
  • Wash and soak rice for 20 minutes, before cooking it to al dente consistency. Drain rice in a colander and set aside to cool.
  • Meanwhile, in a wok heat some oil, to this add the chopped ginger and garlic and saute till the raw smell is gone.
  • Next add the chopped red onions and saute till it turns golden brown.
  • Next add the chopped vegetables one by one and saute till half cooked. They need to be crunchy to bite.
  • Next add the prepared Szechuan sauce or store bought one to the above mix. To this add the cooled rice and gently mix the sauce coated vegetables and rice together, taking care not to break the rice grains.
  • Stir fry rice for 2-3 minutes.Taste test for spice and salt .
  • Serve Schewan Fried Rice with raita or fish fry, or any dish of your choice.
  • For making Homemade Schezwan Sauce
  • First make red chili paste by adding 1 tbsp of the red chili powder to 3-4 tbsp of water and stirring them together to form a paste.
  • Next stir the red chili paste with soy sauce, tomato ketchup, vinegar and salt and set aside.
  • To this add 1 tsp crushed Sichuan pepper or 1/2 tsp black pepper powder.
  • Add this mix to sliced onion, ginger garlic mix in the wok. Saute further till the sauce thickens. Add more water if necessary, keep stirring to thicken the sauce and bring out the flavor of the onion and pepper. The Szechuan sauce is ready.
  • Continue to add it to vegetables as mentioned in the steps above to cook Schezwan Fried Rice.
