Strawberry Glazed Mini Doughnuts

The summer sale was on and I found these cute mini doughnut baking tray there, since then I had been wanting to try making mini doughnuts, not that I have ever made the regular ones before.

Each time I watched someone grab a cup of coffee & a brown bag of doughnuts for breakfast at the start of the day,I often wondered. How could  any one have that kind of sugar at breakfast time ? Perhaps, it was their sugar fix for the day. Some evenings my kid & me would walk into the donut store closer to home .He would take his time gazing through the glass display and almost each time, he would choose the chocolate donut with sprinkles on top.There is something about the sprinkles that gives it a magical feel, like glitter & fairy dust.Every once in a while, he’d say ,”Amma you should just try one of these, then you will understand what I am talking about !”. I would smile , happy in the knowledge that he is enjoying his donuts. Haven’t had a chance to try one owing to my allergic reaction sto egg and donuts sure have it in them.

Finding the egg substitute in flax seed powder, has been a boon to me in many ways.My baking has taken a new and renewed zeal and interest. I have tried making delicious , cakes, cup cakes , brownies and the works. Now venturing into making  egg free doughnuts.YES there is ALWAYS a way, if you are willing to try hard enough !

Did you know they even had a day to celebrate the donuts ? A National Donut day (here in the U.S)!. I had no idea until yesterday, when I chanced upon this information, while searching for this recipe on the net.It is celebrated on the first Friday of the month of June each year. The Donut Day event was created by the Salvation Army in 1938 to honor the men and women who served donuts to soldiers during World War I. In Chicago, the National Doughnut Day is still celebrated as a fundraiser for the Salvation Army.so my timing was perfect!

This is an easy recipe, that took me 20 minutes from start to finish. A yummy treat and a  satisfying snack for the kids during summer time when they come back home after all their games & biking.

Ingredients

  • For the Doughnuts:
  • 1 cup 1 flour

  • 1/3 cup 1/3 sugar

  • 1 tsp 1 baking powder

  • 1/4 tsp 1/4 cinnamon

  • 1/2 tsp 1/2 salt

  • 1/3 cup 1/3 milk

  • 1 tbsp 1 Flaxseed powder soaked in 1tbsp of warm water ( as an egg substitute)

  • 1 tbsp 1 melted butter

  • 10 medium 10 to large strawberries (between 1/2 and 3/4 cup depending on size), pureed with 2 tsp seedless strawberry jam

  • 1 tbsp 1 pure maple syrup

  • For the Glaze:
  • 3/4 cup 3/4 powdered sugar ( I used brown sugar)

  • 1/2 tsp 1/2 salt

  • 1/2 tsp 1/2 vanilla extract

  • 1/2 cups 1/2 cold milk

Directions

  • In a mixing bowl , mix all the dry ingredients well, then add the milk , butter & flaxseed mix by creating a well in the center. Mix well until combined.
  • Stir in strawberry mixture, starting with 1/2 of it and adding more only if needed. Batter should be wet, but not runny.
  • Meanwhile, preheat oven to 425 degrees. Grease the 12-mini doughnut pan with baking spray
  • Pour the dough into a pastry bag or plastic bag and snip approximately 1-inch off end. Pipe batter into each well, reserving extra batter.
  • Bake for 7-9 minutes until doughnuts spring back when touched. Let cool five minutes and turn onto a cooling rack to cool completely.
  • While doughnuts are cooling make the glaze.
  • To make glaze, stir all ingredients together until smooth. When doughnuts are cooled dip each into glaze and place back on cooling rack to let glaze set. When glaze has set, dust some powdered sugar & sprinkles on top.
  • Enjoy!

Notes

  • For the glaze & the doughnut mix, I used only brown sugar & not white sugar, hence you do not see the white sugary glaze on top.
  • For the glaze, I added in some leftover strawberry puree too, it enhances the color & taste of the glaze when you dip the baked doughnuts in the glaze for glazing.
  • Deep frying donuts is a regular practice, I avoided it & baked them instead, for obvious reasons
