The Backstory

Spring is  almost here!!

Shhh…shhh! If we speak loudly it might snow again.

Holding on to holy sunshine with both hands and tuning into the bird song outside the window today, I was slowly packing our picnic basket. We were planning for a picnic outdoors this long weekend, what better than packing a few strawberry cupcakes?

The farmers markets around were in full swing with the brightest colored berries, this spring. I picked myself a few strawberries that looked so juicy & sweet. I had the perfect plan in mind for baking this Easter weekend .

It felt good to wake up my cold  dreary kitchen from its winter slumber, with the sweet heady scent of fresh strawberries baked in cupcakes.

The fluffy buttery cupcakes sprung from the oven, delicious and sweet smelling, like the spring flowers in the yard outdoors.

Spring, a beautiful season of the heart and mind, for new hope, and new beginnings!

Ingredients

  • 14 -15 Strawberries pureed

  • 1 3/4 cup All Purpose Flour/Maida

  • 3/4 cup Brown Sugar

  • 1 tsp Baking soda

  • 1 Egg

  • 1 tsp Vanilla Extract

  • 1/2 cup Butter or Vegetable Oil

Directions

  • Preheat the oven at 350 degrees for 10 minutes.
  • Mix the flour, sugar, baking soda and salt together.Set aside.
  • Now in a mixing bowl add the oil/butter, vanilla extract, egg and beat them together.Then add the strawberry puree to the mix.Now gently add the dry mix to this and beat them all together.
  • Next spoon in the batter into previously set cupcake cups placed in the muffin tray. Make sure they are 3/4 filled and not filled till the top, since they will “runneth over.”
  • Place the muffin tray into the preheated oven now.
  • Bake for 20 -25 minutes. Check with a toothpick or skewer to check if it is completely baked. The toothpick/skewer should come out clean and non-sticky to prove that baking is done.
  • Remove from oven and set it on a cooling rack to cool for 10 minutes.
  • Give it to your little ones at home or pack them in your picnic basket along with other goodies and enjoy them outdoors with your little ones, basking in all the sunlight .

Notes

  •  One can use any kind of frosting on top. I made it plain.
  • This recipe was made before I discovered the egg substitute in flaxseed. I had double gloved and had the epipen handy, while I held on with determination to the hand held egg beater. (For those of you who don’t know, I am severely allergic to eggs ! If that helps you understand, why almost all of my cooking is egg free. )
