Its raining outside, after a week of almost summer heat…felt like an aromatic spicy dish, what better than the Prawn Mint Pulao, which is quick & easy & satisfying too.The mint & the spices bring out the aroma in the appetizing Prawn Pulav. Enjoy.

Ingredients

  • 20 medium 20 /large ones Prawns

  • 2 cups 2 Basmathi rice

  • Mint leaves– a bunch/5 twigs

  • 2 2 Onions-(medium size)

  • 2 tsp 2 Oil

  • 1 tsp 1 Ghee-(optional)

  • 1 1 ″ Cinnamon

  • 3 3 Cardamom

  • 1 1 Bay leaf

  • 1/4 tsp 1/4 Turmeric powder

  • 1 tsp 1 Garam masala powder

  • 2 cups 2 Coconut milk

  • Salt- to taste

  • To Grind:
  • 5 5 Green chillies

  • 3 tsp 3 Coconut shredded

  • 2 tsp 2 Ginger garlic paste

  • Mint leaves

Directions

  • Clean the rice & soak it in water for 10 minutes, drain water & set aside.
  • In a wok, heat oil & ghee ,when its warm add the cloves, cinnamon, cardamom & bay leaves.When they splutter add the finely sliced Onions & saute it for a few minutes.
  • Add Turmeric powder, garam masala powder & the cleaned prawns to the above Onion mix & saute it for a while till prawns turn soft, now add the ground paste with little water to the prawn mix & allow it to cook for 10 minutes with lid closed after adding salt to taste.
  • Finally add the rice to the above mix, making sure all the ingredients are blended in with the rice.
  • Add 2-3 cups of coconut milk to the rice & pressure cook for 3 whistles.
  • Serve hot with Raitha.
