The warm weather is slowly beginning to settle in, which also means that fresh cucumbers have started rolling into our fresh markets and farmers markets here.

This quick and easy Mediterranean Cucumber Salad is made with just four ingredients:

  • Cucumber
  • Radish
  • Red Onion/Shallots
  • Fresh Dill /or any herb of your choice

These when tossed with a light dressing of extra virgin Olive Oil and Lemon Juice, makes it a deliciously fresh and healthy salad.

Ingredients

  • 2 2 -3 Cucumber thin sliced

  • 6 6 -8 Radish thin sliced

  • 1/2 1/2 Red Onion or 2-3 Shallots /thin sliced

  • 1 tbsp 1 Fresh Dill

  • For the Dressing
  • 3 3 -4 tbsp Extra Virgin Oil

  • 1 tbsp 1 Lemon Juice

  • 2 tbsp 2 White Wine Vinegar

  • 1 tsp 1 Dried Oregano

  • Black Pepper Powder to taste

  • Salt to taste

Directions

  • In a large mixing bowl, place the sliced cucumbers.
  • Add sliced radish, onion and fresh dill to the bowl.
  • In a small bowl combine the dressing ingredients (extra virgin olive oil, white wine vinegar, lemon juice, oregano, salt and black pepper.) Whisk until well combined. You can use a mason jar for the same purpose too.
  • Pour the dressing over the salad. Toss again to combine, making sure the cucumber salad is well coated with the dressing. Enjoy!

Which kind of cucumber is best for cucumber salad?

English cucumbers with their thin, dark, edible green skin are best used in this salad.Not only are they seedless which makes them less watery and sweeter, their thin skin requires no peeling and hence can be eaten as such.These cucumbers are also called the hot-house cucumbers.

While all parts of a cucumber are naturally full of water, it’s the seeds that contain the most liquid. So by choosing English cucumber, you’ve already lessened this problem.

But if you cannot find English cucumbers in your area, the normal slicing cucumbers will work too.Make sure to peel the waxy skin of these slicing cucumbers before you add them to your salad.

Do I need to drain or sweat the cucumber before using it in this salad?

If you are not planning to serve the cucumber right away, it is important to drain/sweat the cucumber.

You can do this by salting the sliced pieces of cucumber and placing them in a large colander in your sink. This will drain out any excess water. You don’t have to worry about the salt since that will drain with the water in the cucumber.

Cucumber salads are best served fresh. But if you need to prepare them ahead, then drain them, give them a quick wipe and proceed to add them in your salad.

How do I cut cucumbers for this salad?

One may use a sharp knife to thinly slice the cucumbers or you may use a cucumber slicer or a mandolin slicer to get the nice and round slices of thin cucumber.

Can I use any other herb in place of dill?

If fresh dill is not available you can use dry dill weed.

1 tbsp of fresh dill = 1 tsp of dry dill weed. This recipe calls for 4 tsp of dry dill weed.

If you don’t like the taste of dill, you may use parsley, mint or basil instead.

How to make this cucumber salad?

This cucumber salad is quick and easy to make.

  • In a large mixing bowl add the round slices of sliced cucumber.
  • To this add the similarly sliced radish, thin sliced onions and fresh dill ( if using fresh dill)
  • Next in a small jar mix the dressing ingredients like – 4 tbsp of extra virgin olive oil, 2 tbsp of white wine vinegar, along with 1 tbsp of lemon juice, 1 tsp of dry oregano, (dried dill if using dry weed), salt and pepper. Whisk well to combine.
  • Pour the dressing over the salad. Mix and serve.
