When everyone around is celebrating Cinco de Mayo, join in the fun fiesta and do your part, I thought. The sun had just come out after days and days of rain and gloomy weather, just in time for the celebrations.
The crab apple tree had shed most of its flower petals owing to the rains and the gusts of wind that accompanied it, the past few days.
There was a kind of unspeakable calm beneath the tree, with the petals for carpet. The gentle breeze played music with the wind chimes, the thought of settling down with a bowl of chips and salsa on a Friday evening was too tempting.
The mangoes had just started arriving into the fresh market last week, needless to say I bought a dozen . What better way to celebrate Cinco de Mayo under a crab apple tree than this recipe from the Mexican cuisine, when it was sunny outside, yet the wind blew cold ?
