The weather is getting beautifully warm, birds chirping on trees, friendly neighbors sitting out in the porch chairs waving or greeting as you walk past, children playing outdoors, laughter and giggles…..signs of Summer approaching. Stepping out after nearly hibernating in Winter, into the green green grass seems like a blessing!

The long weekend is here, had been to the Fresh Market a few days ago, knowing very well it will get crowded by the end of the week,  bought a bountiful of fresh veggies and fruits to try out new recipes while we relax at home this weekend.

One never comes home without the King of Fruits, the Mango, in summer (almost Summer!) The mangoes here come from Mexico mostly and I must say I miss the sweet smell of mangoes in Indian Markets wrapped in hay, in cane baskets  to ripen, not so much the fruit flies though!

The mangoes we get here are not as sweet, yet the only kinds we get here to quench our mango cravings in the season. Dutifully  enough, I came home with a box of mangoes too.

The temperature is above 80 F today and rising, wanting to try something light yet tasty with lots of hydrating power packed in it, experimented with this Mango Cucumber  salsa, an easy & quick recipe, all you have to do is dice the fruit and veggies and mix them together and let it chill in the refrigerator before serving.

Ingredients

  • 2 2 Mangoes

  • 1 1 Cucumber

  • 1 1 Red Onion finely sliced

  • 2 2 Tomato cubed

  • 1 1 Green Bell Pepper

  • 1/2 tsp 1/2 Pepper Powder

  • 1 1 Lime squeeze the juice

  • a few a few Cilantro/Coriander leaves

  • a pinch Salt

Directions

  • Cut the mango, cucumber, onions, bell pepper, tomatoes into desired size.Squeeze the lime , add salt & pepper & mix them gently in a mixing bowl.
  • Serve chilled or at room temperature
