Keerai Kootu (Spinach and Lentil Curry)

It’s a cold,cold winter day, what better than to seek the comfort of a creamy, rich, healthy home made curry/soup to warm your innards ?
“Keerai” is a Tamilian( South Indian language) word for Spinach Kootu simply means a thick creamy, luscious soup or a curry that is made of lentils and is coconut based.It is a comfort food when mixed with rice and potato fries as a side, has the potential to chase the winter blues away. Just what I needed today. Indian cooking uses a lot of lentil based cooking and hence they are a staple in every Indian home. In winter they come in handy owing to their characteristic of being able to be stored dry for long periods of time. One can prepare a curry in a jiffy without having to slip & slide through the snow laden streets to go grocery shopping. Using pantry ingredients that are readily available is a blessings in disguise during winter months.
Cooking this delicious South Indian dish, along with some hot steaming rice is a treat you give yourself in the winter months.The fireplace crackled gently, adding warmth to the mix.A slow calm relaxed weekend was unfolding. With the temp’s outside in single digits, the comfort of warm interiors with spicy meal seemed perfect.
Note: This curry/kootu can also be consumed as a soup. Since it’s coconut based, it has a thick creamy consistency . It promises to deliver the comfort one seeks from piping hot soup on a cold winter day. Enjoy!
