My first brush with Tangerines

The first time, I ever tasted a Tangerines was when I was expecting my child.Perhaps it was the craving for some tangy sweetness or me spotting the name “Cuties” on the basket of Tangerines, whatever it was I finished almost 15-20 “cuties” in one go that day. They were deliciously sweets & that is the way I will always remember them.

Bright, happy , cheerful little cuties, they get their name from their place of origin; Tangier, Morocco.

Ingredients

  • 1 1 whole Chicken cut into small pieces

  • 1 1 big Onion finely sliced

  • 1 1 ‘ Ginger Julienned

  • 7 7 -8 Garlic pods crushed

  • A pinch Turmeric powder

  • 2 tsp 2 Black pepper powder

  • 1 tsp 1 Chili powder

  • 1/2 cup 1/2 Fresh Tangerine juice

  • 2 tsp 2 Soy sauce

  • 1 tbsp 1 Honey

  • 2 tbsp 2 Rice Vinegar

  • To taste Salt

  • 2 tbsp 2 Coconut Oil

  • 2 2 Spring onions to garnish

Directions

  • Heat oil in a wok, to this add the sliced onions & saute them till light brown.
  • Now add the garlic & fry them till the raw smell of garlic disappears .
  • Then add the clean & cut chicken pieces & keep stirring till they are half cooked while adding turmeric powder, chili powder , black pepper powder & salt to the mix.Cover with lid & allow the chicken to cook in its own steam.
  • Sprinkle ginger juliennes on top of the mix, along with the rice vinegar.
  • Now add the tangerine juice to the mix & stir the chicken well so the juice seeps into the chicken well and allow it to cook.
  • Next add the soya sauce to the above along with the honey & stir it well together, the gravy slowly starts to thicken & glaze the chicken.Let it cook for a few more minutes.
  • Remove from heat & garnish with Spring onions, serve hot with any flat bread or rice.Enjoy a touch of sweet & tartiness in your Tangerine chicken, along with the aromatic spices.
