Ingredients

  • 3 tbsp 3 Butter

  • 1 medium 1 Onion

  • 3 cups 3 Fresh Baby Spinach

  • 2 cups 2 Chicken Stock or Water

  • 1/2 tsp 1/2 Pepper Powder

  • 3/4 cup 3/4 Milk

  • Salt to taste

Directions

  • In a thick bottomed vessel, heat the butter, once its warm add the finely sliced onions & sauté it to a light brown.
  • To this add the clean & washed baby spinach & stir it till it’s wilted.
  • Now, to the spinach add the water or chicken stock, along with salt & pepper and bring it to a boil.Once it boils, simmer it for 10- 15 minutes.
  • Take it out of the heat , wait for a few minutes before you run it in the blender for a partially coarse blend.
  • Return to pan & whisk it well with cream or milk .Simmer for another 10-15 minutes, so the flavors blend, check for salt & pepper taste, if required add some & remove from heat
  • Serve hot with a squeeze of lemon
