Memorial Day Weekend

Summer does not officially start until mid-June, but it seems that once Memorial Day weekend comes around, we’re already in summer mode. Suddenly everyone is breaking out their grills and outdoor cooking tools, bonfires are lit, backyard furniture is dusted off, and the pools are opened.

For those of us who had to endure the cold winter months and anxiously await this glorious fun-filled weekend, we are ready to celebrate!

Memorial Day weekend is all about food and fun. BBQs, pool parties, boat outings, beach days, however one chooses to celebrate, you know good food is going to be involved!

The Memorial Day Parade has been cancelled, since it’s raining so hard here today.

The sweet luscious pears I bought last week are patiently waiting in my fruit bowl on the kitchen table. I want to try my hand at baking something with these fresh pears. Pondering between the idea of making a pie and a tart recipe, I pick the easy pie recipe.

Ingredients

  • 3 3 Pears- 3 ripe ones, sliced lengthwise

  • 10 10 ‘ Pie Crust store bought

  • For the Filling
  • 1/2 cup 1/2 All Purpose Flour

  • 3/4 cup 3/4 Brown Sugar

  • 1/2 1/2 Stick Butter

  • 2 tbsp 2 Flaxseed powder ( soaked in 2tsp of water) egg substitute

  • 1/2 tsp 1/2 Powdered Cinnamon

  • A pinch Powdered Nutmeg

  • 1 tsp 1 Vanilla extract

Directions

  • Beat all the ingredients of the filling together to make a smooth paste.
  • Add the filling to the ready made pie crust
  • Layer with pears in any shape you want it in, layering the larger sizes & decreasing the size as you arrange them in a fan shape
  • Set it in a preheated oven at 350 degrees for 50 minutes
  • Remove & let it cool.Serve with Ice-cream to start of your Summer right

Notes

  • The recipe suggested a 50 minute bake time, I’d tweak a bit next time, coz the sides got burnt,it suggested a 3/4 cup of brown sugar, I’d reduce it to half a cup next time, coz the pear itself was sweet, other than that the taste turned out yummy, for a quick & easy recipe.Enjoy!
