  • 8 Carrots

  • 1 Red Potato

  • 1 Onion (Large)

  • 1 inch Ginger (freshly minced)

  • 3 cloves Garlic

  • 2 tbsp Coconut Oil

  • 2-3 Mint Leaves

  • 3 cups Water

  • 1/2 tsp Salt (adjust to taste)

  • 1/2 tsp Black pepper powder


  • Heat oil in the pressure cooker first. To this add the minced garlic cloves & saute a bit.
  • Next add the julienned ginger & continue to saute.
  • Next add the finely sliced onion & saute fora . few minutes till they turn golden brown.
  • To the above now add the peeled, cut & clean carrot pieces, along with the cubed potato.Add some salt & a few mint leaves, along with the water. Cover the pressure cooker with the lid & allow it to cook.
    Let it cook until you hear 4-5 whistles from the pressure cooker. Remove from flame & set aside for cool.
  • Once the pressure releases, lift the cooker lid up and remove the mint leaves.
  • Wait until the mixture is cooled completely, remove the stock now place the cooked carrot , potato & onion mix in a blender and whip them into a smooth paste , without adding any water.
  • Transfer this paste to a pan along with the stock. At this point you may add some water to adjust the soup to the required consistency.
  • Heat the pan & let the soup mix boil for a minute or two. Then add the back pepper powder, stir & serve hot.
  • When ready to serve the soup in soup bowls one may sprinkle some black pepper powder on top as well (optional ) or top it with cream .


  • Adding onion and potatoes to soup increases the flavor of the soup, though the choice to add or not is completely optional.
