What is Clam Meat Fry/Marwai Ajadhina?

Clam Meat Fry or Marwai Ajadhina , is an authentic seafood delicacy made with either clam or mussel meat, from the coastal town of Mangalore in South India. It is a quick and easy seafood preparation, absolutely delicious, spicy and flavorful. It can be had as an appetizer or a side dish with rice.

Seafood and Early Spring

When it starts to get warmer, the earthy aroma from my spice rack seems to tease my senses. Every place on earth has a distinctive smell & memory attached to it. When I think of Mangalore, my native place, a coastal town in the South of India, the first thing that comes to mind is the delicious seafood and the salty sea breeze, followed by the laughter & joy of friendship.The delicious seafood one gets to taste here is a memory you carry with you for a life time.


Last night it had rained heavily with lightening & thunder to match ( yes, April showers! ) .When I woke up this morning the air somehow smelled of the coastal town I was so familiar with, taking me down memory lane. Needless to say seafood was on my mind today.

Considering its the windy city of Chicago, the air always has a crispiness about it, what better way than to pair it with some seafood and the earthy aroma from my spice box ? So here I was, with my pack of frozen clam meat, spices and all ,ready to take on this crispy Spring day.



Nostalgia strikes again!

My memories lingered on to my student days when we combed the coastline to find delicious seafood restaurants that fit our modest budget. We never once failed to find these hidden gems along the fishing villages that lined the coastline.I remember those happy carefree, days of student life when we devoured all the seafood in the plate without exercising any restraint, or diet consciousness.Taste we did, the sensory essence of the Mangalore served on a platter as clam roast, crab fry, spicy fish curry…you name it we had them all……and blissfully so!

Recreating the magic

I was determined to recreate that magic in my kitchen today, so here I was savoring my clam spicy roast for lunch. being in a home away from home is no reason why you should miss out on all the delicious food you so enjoyed. Ingredients

  • 1 pack 1 Clam Meat/Marwai

  • 1 1 Onion (Big) or 6-8 shallots finely sliced

  • 1/2 tsp 1/2 Fennel seeds

  • 5 5 -6 Green chilies

  • 1 1 Tomato cubed

  • 4 4 -5 pods Garlic

  • 1 1 ” Ginger

  • 1/4 tsp 1/4 Turmeric powder

  • 3/4 tsp 3/4 Garam Masala

  • 1 tbsp 1 Chilli powder

  • 1 tsp 1 Black pepper

  • to taste Salt

  • 2 tbsp 2 Vinegar ( or fresh Lemon extract)

  • 3 tbsp 3 Coconut Oil

Directions

  • Boil 2-3 cups of water in a steamer & then add the washed & cleaned baby clam into it while simmering the flame & let them sit for 3-4 minutes on medium heat.
  • Remove the clam meat/marwai from heat & wash them under running cold water by placing them in a colander.Set aside for a few minutes, till the water is completely drained.
  • Now add the lemon juice or Vinegar to the washed clam along with salt to taste, mix well & set aside.
  • Meanwhile, in a wok, heat the oil ,to this add the fennel seeds when they splutter add the onions & saute for a few minutes till they turn light brown.
  • Next add the slit green chillies & the garlic & saute for a few minutes, when the raw smell disappears add the turmeric & chili powder along with the garam masala & blend them together.
  • Now add the ginger jullianes along with the clams that have been marinated in lemon juice & mix them all together in the wok. One can add a tablespoon of water at this stage if needed.Keep the lid covered & allow it to cook after adding the tomato slices.
  • In 5-10 minutes the clams will be cooked, let the water evaporate completely, since this is a dry preparation.Serve hot with flat breads or rice.Enjoy.

  • Yummy delicious quick & easy recipe for clam meat.
  • Mussels can be prepared using the smae recipe too.
  • Marwai is the name given to clam meat/mussels in the local language of Tulu in Mangalore, the coastal town in South India.
