The Backstory

The first time, I saw an avocado in the fresh market aisle , I was a little curious as to how I am going to use this fruit ? Vegetable ?Don’t we all have days like that ,when we walk into the fresh market & end up buying health fruits that are in little mesh bags?

Well, it was one of those days for me. With no particular plan as to how I am going to use this fruit in my cooking I bought a small bag of avocados to try out.Each time I opened the refrigerator, they seemed to mock at me saying, “Now what ?”

My introduction to this “alligator pear” is very recent, apart from “guacamole“I did not know how  to use them in any other recipes .Why should it always be guacamole, I thought.

I mustered the courage to pick up those avocados that were hiding in the furthest corner of my refrigerator.With  a little bit of creative streak  & a bit of health consciousness on my mind, I ventured into trying something new.

The healthy benefits of avocados is from its high monounsaturated fat content, its fiber content, the vitamins & the folate and the healthy minerals  it contains.This delightfully versatile avocados with their flavor, texture & nutritional value can be used in varied recipes,I was told.

My first try with this amazing fruit, was  in making these avocado cupcakes Much to my delight they turned out  as the most delicious soft and  moist cupcakes I have ever made or tasted.

Ingredients

  • 1 cup 1 All purpose flour/Self-rising flour- 1 cup

  • 1 cup 1 Sugar

  • 1/2 tsp 1/2 Baking powder- 1/2 tsp

  • 3/4 tsp 3/4 Baking soda- 3/4 tsp

  • 1 1 Avocado pureed with 1 tsp lime juice

  • 1/2 tsp 1/2 Vanilla extract

  • 1 cup 1 Milk I mixed 1 tsp of White vinegar with the milk- I used this combo to substitute for Buttermilk in the original recipe

  • 6 tbsp 6 Ghee since I ran out of butter

  • 1 tbsp 1 Flaxseed(powdered) mixed with 3 tbsp of water- allowed to set into a gel consistency after stirring it well.This is used as an egg substitute here in this recipe.

  • A pinch Salt

Directions

  • Mix the flour, baking powder, soda & salt together & set aside
  • Now slowly beat the sugar & ghee together into a fine paste like consistency.
  • Next add the avocadoโ€™s that has been pureed ,along with the flaxseed paste & the vanilla extract to this mix .
  • Beat them all together into a fine paste.Now to the above gently add the flour mixture along with the milk
  • When all the flour is mixed with the milk & avocado puree, make sure its a homogenous mix with no unmixed powder particle left behind.
  • Grease a Bundt pan or a cupcake tray & powder it with a little flour & pour in the batter.
  • Preheat the oven for 10 minutes at 350 F & stick in your cake pan.
  • When the aroma of the cake reaches you, in around 45 minutes or so gently check the cake to see if it is baked well by sticking in a toothpick or fork.
  • If the toothpick comes out dry & non-sticky it’s time to switch off the heat.
  • Gently remove from the oven & place it on a cooling rack to let it cool.
  • Serve it to your little ones at home. Enjoy.

Notes

  • It is a very moist, creamy textured avocado cake with a very subtle flavor One can use any icing on top, I stuck to my plain & simple healthy resolution, so did not use any icing.
