It’s the Memorial Day weekend, a time for parades, picnics and patriotism.The weather is just perfect for outdoor picnics, so the long weekend celebration started early.Chicago is known for its deep dish pizza and I have been wanting to try my hand at it for several months now after tasting it recently and learning it could be made egg free. Today seemed like a perfect day to try this dish, since I was planning to take my kid and his friends for a picnic, what better than pizza for hungry kids after all that swimming and playing outdoors ? The Deep Dish Mini Pizzas seemed to be the ideal choice,since it was kid friendly and easy to pack. The end result a lovely picnic, pizzas gone, happy kids and content Mom smile emoticon Memorial day is known as the unofficial start of summer, so kick start your outdoor fun with these delicious mini pizzas and have fun while at it.

Ingredients

  • 1 pack 1 (6.5 Oz) Pizza Crust mix-

  • Tomato sauce

  • 8 8 -10 Mushrooms- ( cubed)

  • Spinach- a bunch ( finely chopped)

  • 1 1 Onion- ( finely sliced)

  • Mozzarella Cheese- grated for topping

Directions

  • Mix the Pizza crust mix with half a cup of warm water and knead it well.Keep covered for 10 minutes in a warm place in the kitchen.
  • Get all the other ingredients ready after chopping them fine.
  • Next grease a muffin tray with nonstick spray oil and then gently place a ball of dough in each muffin cup, taking care to press the pizza dough along the sides of the muffin cup , right till the edge sealing the edge nicely.
  • Preheat the oven at 400 degrees for 10 minutes, then gently place the muffin tray with the pizza crust ONLY to bake for 10 minutes.This ensures the crust is well formed before you load the filling.
  • Now gently remove the muffin tray from the oven and start with placing a tablespoon of tomato sauce on each pizza cup spreading it nicely all along the sides.Then gently layer with sliced onions, mushrooms, spinach in that order.
  • When that is done, top it with grated mozzarella cheese generously.Now gently place the muffin tray back into the oven & bake it for 20 minutes.Check to see if the edges have browned well before removing it from the oven.
  • Let it cool, then gently use a butter knife along the edges to scoop out the deep dish mini pizzas from the muffin cups.They are ready to serve or pack for a picnic.
