Crispy Ragi Dosa / Finger Millet Crepe

This weekend has been miserable to say the least, we are snowed -in since Friday and are stuck indoors, in what seems like a longest winter of all.

Keeping myself creative is the only way I could think of to chase the winter blues away.  A small portion of the idli batter I had made last weekend was still left, wanting to make something  new with the leftover batter, I was fiddling with the idea, while setting my pantry straight this weekend.Suddenly, I chanced upon the Ragi flour I had bought sometime ago, sitting in a small bottle in the corner of a shelf….couldn’t think of the reason why I had bought the ragi flour/finger millet flour, coz it was never my favorite food, must have been on one of those days when a health & fitness goal pops up in your mind, I thought smiling.

My kitchen suddenly seemed to fill up with my Dhodda’s (grand mom) laughter, amidst tears and smiles my thoughts flew back to the days when in her bed-ridden state she would have her breakfast in bed most days. My greatest joy would be sitting beside her and making her smile for one reason or another, plaiting her silky long hair and pampering her in every way possible. She was and is my dear heart to this day. In her  plate would sit an unattractive leathery looking Ragi dosa, she would slowly take small bites of  it with her feeble weak fingers. “Dhodda” I would ask, “how do you eat this boring dosa , day in and day out for breakfast ?” She would smile, in her own loving way and explain it’s healthy food  for a diabetic like her. Our  four legged furry pet, Rocky would sit devotedly at her feet, waiting for her to swing a piece of ragi dosa, it was a way that (wo)man and pet entertained each other, in their need to connect to another soul, it healed and nourished them both.I silently watched the beautiful bond between them without saying a word, lest the magic of the moment disappear. Today’s Ragi Dosa is for you Dhodda, for the one in heaven letting you know, you are in my heart & mind each day of my life, even though you are not physically with me & yes, this rebel of a grandkid would not have the leathery Ragi Dosa, but made it more crispy and delicious,  the core of Ragi remains with you in mind. Health it is still, I just gave it a face lift !!

Ingredients

  • 2 cups 2 Leftover Idli Batter

  • 1 cup 1 Ragi/Finger Millet flour-

  • Salt- to taste

  • Water- to make it into a watery consistency enough to pour it as a Dosa

Directions

  • Mix the idli batter with the ragi flour making sure there is no lumps in the batter.
  • Add as much water as required to make it into a watery pancake/dosa consistency.
  • Add salt to taste.
  • Set the  cast iron skillet on the flame, spray cooking oil when warm and pour the batter with a spoon thinning it down to be able to roll into a dosa/crepe when done.
  • Serve hot with chutney or homemade mango pickle or any spicy curry.
  • Enjoy!
