School is closing in a day for the Summer Break, wanting to make something yummy when the kid comes home, I get down to making these Cheddar Bay biscuits which he seems to love.Not exactly sure how it will turn out, load the baking tray into the warm oven with a prayer on my lip, within a few minutes just like the sunlight soaking the windowsill, our home smells deliciously warm & wonderful.They turned out crispy on the outside, fluffy & soft on the inside,hastily I brushed the garlic butter glaze on the still warm biscuits & set it on the cooling rack & rushed to school to pick my kid up.On returning home, the smile on the face on opening the door, PRICELESS ! “Is it what I am thinking , it is Amma ?” he asks.Smugly, I say, “Go find out” Entering the kitchen,an excited voice says,” You are the best! Amma, I love you”.Holding back a tear, I’m rooted to the spot, it’s for moments like these, I live .

Ingredients

  • 1 3/4 cups 1 3/4 all-purpose flour

  • 1/2 tsp 1/2 salt

  • 1/2 tsp 1/2 baking powder

  • 5 tbsp 5 butter

  • 1 cup 1 milk

  • 1 cup 1 shredded Cheddar cheese

  • For the glaze:
  • 1/4 cup 1/4 butter, melted

  • 1 clove 1 garlic, minced

Directions

  • Preheat oven to 425 degrees F (230 degrees C).
  • In a large bowl, sift together flour, salt and baking powder. Cut in butter until mixture resembles coarse crumbs. Make a well in the center of flour mixture. Add the milk and cheddar cheese; stir to combine. Drop batter by spoonfuls onto an ungreased baking sheet.
  • Bake in preheated oven for 12 to 15 minutes, until lightly browned. While biscuits are baking mix melted butter and minced garlic. Brush garlic butter over hot baked biscuits.

Notes

  • Next time, I might remove the biscuits from the oven in 12-13 minutes to make sure the cheese does not turn brown.
