Cauliflower & Green Peas Korma
Kurma : A simple, creamy vegetable stew of India which is mildly spiced and prepared using coconut milk as a base is called a Kurma/Korma.This recipe of Cauliflower and green peas Kurma is a great vegetarian accompaniment to any Indian flat breads or piping hot rice.
Watching the TV this morning, the weather channel reporter says a heavy snow storm is headed our way. He also chirps a bit about “Winter Readiness ” week. Well, for me it can only mean one thing coming home after work, wading through a long crazy traffic, awfully hungry, wishing a magic genie would appear out of thin air & keep some food ready at home when I walk in. So in my “winter preparedness” mode, I set about preparing this delicious “Korma” made of cauliflower & green peas.
Korma is a dish originating from South Asia & is supposedly having a rich Mughal influence with its flavor of spices, where meat or vegetables are braised with coconut milk, stock, yogurt & cream with an ample amount of nut & seed paste.It can be had as a curry with flatbreads or rice, or as a soup by itself owing to its rich creamy texture and the spicy flavor which could warm your toes on a cold winter day
