Sandwiches are boring for weekends,so decided to give our bread a twist in the tale.Growing up I was never fond of bread,I always thought bread & apples are standard on the hospital visit menu card,hence growing up in South india,I preferred my Idlis & dosas for breakfast indeed.Morever with my egg allergy,I was never sure which bakery made egg free bread after a memorable incident with a supposedly”egg free” bread from the renowned Iyengar bakery.Each day we passed by the Iyengar bakery in our hometown, the aroma of freshly baked bread used to tantalise our senses,that particular day I threw caution to the winds & with my brother walked into the bakery armoured to savour the freshly made bread in all its varied splendor,& offcourse the man at the counter convinced me that there was no egg white coated on the bread like most bakeries do & it was a purely a”brahmini” kind of bread.Convinced, bread roll in hand, not waiting to get back home I nibbled the fresh bread, pillion riding on my brother’s bike.Just a few seconds later, realised the road was moving faster & this time it was not because of my brother speeding away,it was more than that…..the colors of the trees & cars began to take a greyer shade merging into darkness & before I knew it,I was in the emergency room being treated for allergic reactions ( more such interesting “eggsperiences” to follow in future egg free recipes)…..bet that was the shortest distance I travelled from Iyengar bakery to the Emergency at that point in my life,hence mostly kept a safe distance from bread always.Many years later, last week while grocery shopping I found this bread with ingredients listed & which seemed egg free,so I took my chance remembering the bucket list of to do things before I die:)I survived the sandwich I made this week so ventured into this Bread Upma recipe with an Indo-Chinese twist to it.It can be served as brunch or an evening snack, either way it tastes delicious,got the seal of approval from my little one already who said,”It tastes yummy Amma, I can have it anytime, anywhere” what more does one need, so here I am with another recipe from my bread box.Enjoy with your lil ones too 🙂

Ingredients

  • 12 slices 12 Bread- ( cubed with sides sliced away)

  • 2 tsp 2 Oil

  • 1/2 tsp 1/2 Urad Dhal

  • 1/2 tsp 1/2 Channa Dhal

  • 1 tsp 1 Cumin seeds

  • 1 tsp 1 Mustard seeds

  • 3 3 -4 Curry leaves

  • 4 4 -6 Green chillies-( sliced lengthwise)

  • 1 1 big Tomato- ( sliced thin)

  • 1 1 big Onions- ( sliced lengthwise)

  • 3 3 -4 Ginger juliienes

  • a pinch Ajino moto

  • 2 tsp 2 Soya sauce

  • 1/4 tsp 1/4 Turmeric powder

  • 1 tsp 1 Red chilli powder- ( adjust spice level according to taste, since green chillies are already present)

  • 3/4 cup 3/4 Vegetables

  • Salt- to taste

  • 1 tsp 1 Lemon juice

  • Cilantro/Coriander leaves- a bunch/Finely chopped for garnishing

Directions

  • Heat oil in a wok,add the urad, channa dhal when they turn light brown add the cumin seeds & mustard along with curry leaves, wait till they splutter.
  • Now add the green chillies, onions & saute for a few minutes before you add the tomatoes in.
  • Now add the ginger jullienes with turmeric & chilli powder & keep stirring the mix for a few minutes.
  • Then add the vegetables, ajinomoto & the soya sauce & keep stiiring.
  • Now add the bread cubes which have been cut into small squares after slicing their brown sides away.Add a little salt to taste to the mix, & then keep stirring the mix,till the bread pieces are well coated.
  • Sprinkle lemon juice & cilantro on top & take it out of the stove & serve hot.

Notes

  • Easy way to use a day old bread( read stale) & children love it without knowing that there is a good amount of veggies in them.Veggies could be anything one chooses, I added carrots, peas,beans & corn .Enjoy ur brunch!
