Ingredients

  • 3 cups 3 Fresh Grated Carrot

  • 1 tbsp 1 Lemon or Orange zest

  • 1 1 Garlic clove minced fine

  • 1/2 tsp 1/2 Ginger fresh grated

  • 1/4 cup 1/4 Raisins golden or regular

  • 1/4 cup 1/4 Cashew nuts toasted

  • 3 3 Scallions

  • 1/4 cup 1/4 Cilantro/Coriander leaves chopped

  • 1/4 cup 1/4 Olive Oil

  • 2 tbsp 2 Fresh lime Juice or substitute with Apple Cider Vinegar

  • 2 tbsp 2 Honey Agave or any sweetener can be used as a substitute

  • Salt to taste

  • 1/2 tsp 1/2 Black pepper

  • 1/2 tsp 1/2 Turmeric powder

  • 1 tsp 1 Chaat masala or curry powder

Directions

  • Place all ingredients in a mixing bowl and toss well.
  • Taste.Add salt if needed. Check for taste of salt, acid and sweetness.
  • Serve chilled.
