What are the best vegetables to put in a soup?

Pretty much any vegetable can be used in making this healthy Vegetable soup. Avoiding watery vegetables like cucumber , water cress, radish etc would ensure less sogginess in your soups.

What spices and herbs go into making this vegetable soup?

Do you have to cook the vegetables before putting them in the soup?

Vegetables like Onion and garlic will need to sauteed or at least need a brief sweat in a fat based liquid like ghee or oil, before adding the other ingredients into the soup making process.

Vegetables like carrot, beans, green peas etc can work just fine added directly to the simmering soup and stews.

What can you add to vegetables for flavor?

To infuse your vegetables with flavor and mouth-watering aromas, sauté them in butter or oil (coconut, olive etc) along with garlic and herbs like bay leaves.

Next spice them up with salt, pepper, cinnamon sticks ,red chili flakes, and garam masala. Add in the sliced vegetables along with water or broth and stir yourself a healthy vegetable soup for wintry cold evenings.

How to thicken up Vegetable soup?

  • Make a vegetable broth by blending some vegetables and use it as thickener. This is where immersion blenders come in handy!
  • Adding oats or barley flour ( 3 tbsp in 1/4 cup water) or corn flour/corn starch
  • Making a broth of boiled potato (1-2)
  • Adding cream or yogurt
  • Blending in bread
  • Adding cooked lentils or rice

What can I pair vegetable soup with?

Ingredients

  • 1 tbsp 1 Coconut Oil can substitute with ghee or butter

  • 6 6 -8 Spring Onions finely chopped

  • 1 1 Ginger minced fine

  • 4 4 -5 cloves Garlic minced fine

  • 6 6 -10 Carrots peeled and cut to desired shape

  • 1 cup 1 Beans cut to desired shape

  • 1 cup 1 Sweet corn

  • 1 cup 1 Spinach

  • 2 2 Potatoes Peeled and cubed

  • 3 cups 3 Water or Vegetable stock

  • 1 tbsp 1 Corn flour/starch mixed with 1/4 cup water

  • 1 tbsp 1 Sugar optional

  • Salt to taste

  • 1 tbsp 1 Apple Cider Vinegar

  • Spices
  • 1 1 stick Cinnamon

  • 1 large 1 Bay leaf

  • 2 tsp 2 Red Chili flakes

  • 2 tsp 2 Black Pepper Powder

Directions

  • Wash the vegetables well under running water. Set aside.
  • Peel the carrots and cut into desired size, same goes for beans, cauliflower and other veggies that need to be cut into smaller pieces of desired size.
  • Next in a soup pot/ dutch oven heat some coconut oil/ghee. To this add the bay leaf, cinnamon stick and minced garlic, saute a bit till a nice aroma emanates.
  • Next add in the clean and cut vegetables, stirring them a little and sauteing them till they turn soft under a high flame.
  • When the veggies turn tender, pour in the water/stock to the veggies along with salt to taste. Cook covered for a few minutes.
  • Meanwhile in a small bowl mix the corn flour/starch to 1/4 cup of water, making sure there are no lumps. Gently pour this mix into the boiling soup mix and allow it to thicken.
  • Gently stirring the soup mix, would thicken the soup after addition of the corn starch. The soup will thicken further on cooling, so don’t over do the thickening, if you like your soup a little watery and not too thick.
  • Next add in the sugar and black pepper powder.Stir it well and switch off the flame.
  • Set aside to cool a bit, then add the red chili flakes and the Apple Cider Vinegar.
  • Taste to see if the soup needs more salt.Add if necessary at this point. Serve hot in soup bowls along with toasted bread or naan.
  • Rice or noodles can also be added to the soup, if you so prefer it, or you can drink/eat the soup as a wholesome meal by itself.

Notes

  • Ginger is optional, but it certainly adds to the flavor of the soup.
  • I have used corn starch as the thickening agent in my vegetable soup here. You may use boiled potato broth or vegetable broth, if you so desire.
