Banana crumb muffins are scrumptious quick breads that are sweet.The crumb topping is what makes these muffins stand apart from the ordinary.

What is a muffin?

A muffin is an individual-sized, baked product. It can refer to two distinct items, a part-raised flatbread that is baked and then cooked on a griddle and a cupcake-like quickbread that is chemically leavened and then baked in a mold.

Muffins or quick breads as they are called are individual sized and can be sweet or savory.

They are baked immediately after the ingredients are mixed, there is no need to wait for the leavening to occur because they rise during baking, hence relatively quick to bake.

The Back Story

The sun was shining brightly , the outdoor was calling….what better way than baking these round little darlings which are a picture of simplicity and a snap to make.

Who does not like a moist treat shaped like a cupcake?

So here, I was baking these banana crumb muffins, listening to the birdsongs outside the window in the early hours of the morning .For those of us who run out of ideas for breakfast, these are perfect, to grab and go, even on those rushed mornings.

With the temperatures on the rise, the bananas in the fruit bowl had ripened overnight.The temptation to try making these muffins was strong. They have been sitting on my list of recipes to try for quite some time now.

So mixing bowl in hand,I started to add one ingredient after the other and before I knew it, there it was sitting pretty within minutes.

Ingredients

  • Wet Ingredients
  • 3 3 Ripe Bananas– 3 overripe

  • 3 tbsp 3 Flax seed powder soaked in 4-5 tbsp of water

  • 2 tsp 2 Vanilla extract

  • 1/2 cup 1/2 Ghee/Purified butter

  • Dry Ingredients
  • 2 1/4 cup 2 1/4 All Purpose Flour/Maida

  • 1 cup 1 Brown Sugar

  • 2 tsp 2 Baking Powder

  • 1/2 tsp 1/2 Cinnamon powder

  • 1/2 tsp 1/2 Salt

  • Rice crackers coarsely powdered- for topping

Directions

  • Mix all the wet ingredients one-by-one and set aside.
  • Mix the dry ingredients together & add it to the wet ingredients & whip them together.
  • Pour into paper cup lined muffins tray , after topping them with coarsely powdered rice crackers
  • Bake it for 20- 25 minutes, in a preheated oven( 350 degrees for 10 minutes)
  • Stick a toothpick in to check if they are done. If the toothpick comes out clean they are ready to be taken out of the oven.
  • Place them on a cooling rack for 10 minutes, then serve or pack to go.Can also be frozen for later use.Enjoy
