Baked Fish( Spanish Mackerel)

Ingredients
- To Marinate
2 tbsp 2 Chilli powder
1 tbsp 1 Coriander powder
1/4 tsp 1/4 Turmeric powder
2 tsp 2 Ginger garlic paste
Salt -to taste
2 tbsp 2 Lime juice
- Other ingredients:
2 tsp 2 Oil
1/2 cup 1/2 Onions- finely chopped
1/2 cup 1/2 Tomatoes (cubed)
2 pounds 2 Mackerel/Fish (cut into pieces)
Cilantro/Coriander leaves- a handful finely chopped
Directions
- Clean & cut fish into required size/pieces
- Mix all the marinate ingredients together into a smooth paste & rub them gently into the fish pieces & on top.Keep marinated for 30 minutes.
- In a pan warm oil ,to this add finely cut onions & saute them till they turn light brown, now add the cubed tomatoes & saute for a few minutes till the tomatoes turn soft.
- Preheat oven for 10 minutes at 350 degrees.
- Now in a baking pan greased with little oil on the sides add half the onion tomato mix at the bottom,then layer it with the marinated fish,then top it off with the rest of the onion tomato mix.Sprinkle Cilantro /Coriander leaves finely chopped on top & cover the baking dish with tin foil.
- Put it in the oven for 40 minutes at 350 degrees & bake.
- Serve hot with rice/chapathis.
Notes
- Here I have used Spanish Mackerel fish since it is the only mackerel available,I served it with Zucchini rice since the spicy flavor of the baked fish goes well with the bland flavor of Zucchini rice:)Enjoy.
