The Different seasons of the Midwest

It was the weekend with bright sunny skies outside. Birds were chirping outdoors, summer fast approaching. A relaxed pace in the air, a sense of contentment the warm weather usually brings. It felt good to step out and enjoy the weather. The joy of living in the midwest and enjoying the different seasons is a treat one gives oneself.

Weekend chores

My mind races to the “To- Do- List” for the weekend.Yet food comes first in the list. What do I cook today ? Weekends are for experimenting with food, trying out new recipes, blending flavors to create new tasty dishes.

The avocados, I bought last week were sitting on the kitchen counter. Suddenly a thought emerged to use them in a dish with chicken, creating a creamy texture.Does it always have to be butter chicken ?

What’s cooking today ?

Summer time is for summer bodies, I told myself .Finding healthy options is not a must but a necessity! What if I substitute butter and replace avocado’s instead and create an Avocado Chicken curry recipe instead ?

Health Benefits of Avocados

Did, I not hear avocados lower the cholesterol level, have highest fiber content ,are rich in Vitamin C and E and folic acid and also improve memory…Yes, yes and yes ! Thus was born this Avocado chicken curry in a perfect blend of Indian spiced sauce with the richness and creamy texture of the avocados.

Total time

  • 8 8 -10 pieces Chicken Thigh

  • 1 Large 1 Onion finely sliced

  • 1 Large 1 Tomato cubed

  • 2 2 Avocados skinned, pitted and blended into a fine paste

  • 2 tbsp 2 Coconut Oil

  • 2 tsp 2 Ginger Garlic paste

  • Salt to taste

  • Spices
  • 1 1 inch Cinnamon

  • 3 3 Cardamom

  • 1 tsp 1 Chilli powder

  • 1/4 tsp 1/4 Turmeric powder

  • Heat oil in a wok , when warm add the cloves, cardamom and cinnamon till they splutter.
  • Now add the finely sliced onions & sauté them till light brown, then add the cubed tomatoes & keep stirring till they turn soft.
  • Next add the turmeric powder, chili powder & stir for a few minutes, before adding the cleaned and cut chicken pieces into it.
  • Stir for a few minutes without adding any water allowing the chicken to cook in its own steam.
  • Next, add the ginger garlic paste & stir it into the mix, till the raw smell disappears. Add salt to taste.
  • Let the sauce cook in its own steam, now add the blended thick paste of avocados into it, which gives the gravy a creamy texture. Cook covered with lid for another 5 minutes until the raw smell disappears & you smell the subtle aroma of avocados blending with Indian spices.
  • Remove the cooking pan from heat & serve the avocado chicken curry with Indian flat breads or steamed brown rice.

  • The creamy texture of the avocados in the chicken curry proves to be a healthy choice in replacing the butter in the butter chicken recipe. Talk about maintaining those curves 🙂
