Akki Roti

The southern state of Karnataka in India, is filled with diverse food, ranging from coastal sea food to central land to the spicy hilly zone, each one exhibiting the richness in the culinary heritage of the land.

The varied cuisines of this land are:

“While the Udupi cuisine boasts of different types of dosas, the seafood delicacies dominates the coastal Mangalorean cuisines. The northern part of Karnataka uses Jowar flour to prepare Jola roti, Thallipeet, etc. and these roti’s are  complemented with  spicy curries.On the contrary to the North, the people of South Karnataka, especially the old Mysuru region are accustomed to foods prepared from ragi flour. One of the most popular traditional dishes in South Karnataka is Raagi mudde (Raagi ball). The other popular dishes of South Karnataka are Ragi roti, Akki roti and Benne Dosa. The variety of rice dishes such as Kesari Bath, Idli, Bisi Bele Bath, and Vangi Bath are also quite popular. The curries in this region are prepared using a fine blend of spices such as mustard, asafoetida, and curry leaves.The hilly region of Coorg is famous for its unique cuisine. This consists of spicy meat curries prepared either from pork, chicken, or mutton. Kokum Kachampuli is one of the common ingredients used in the curry preparations here. This offers the tangy taste to these meat dishes.”

One such staple food items for breakfast is Akki Roti which means Flattened Rice Bread. When you want to have some creative fun for breakfast and have time on your hands on weekends, a quick and easy , yet delicious breakfast staple would be Akki Roti. This weekend, the snow on the ground is slowly beginning to melt only slightly, yet it is melting, sunnier skies after weeks of gloomy winter weather, a little inspiration to do something different for breakfast is there and thus was born the Akki Roti in my kitchen this morning.

The ingredient list is not complicated, most of it you would find in your pantry and refrigerator, throw in all of them together, warm a dosa pan and toss your Akki Roti around. Layer it with a dollop of butter on top, which adds to the delicious warmth on a cold winter morning.

Akki Roti

Ingredients

  • 2 cups 2 Rice flour

  • 1 tbsp 1 Coconut Oil

  • 1 cup 1 Water ( Luke warm)

  • Salt- to taste

  • 1 1 Carrot (shredded fine)

  • 1 1 big Onion ( sliced fine)

  • 5 5 -6 Green chillies ( sliced fine)

  • A few A few Cilantro/Coriander leaves

Directions

  • Take the rice flour in a mixing bowl and gently add the luke warm water to it along  with salt to taste and gently knead it with coconut oil.
  • When the dough is nicely kneaded and does not have any unmixed powder left, add the rest of the ingredients one by one to the above mix and thoroughly mix them into a round ball of dough.
  • Set aside for 10-15 minutes after covering it with a lid.
  • Meanwhile spread a soaked and squeezed kitchen towel on your rolling table, ready for patting the dough on to it, to make Akki Roti.
  • Now open the lid of the mixing bowl, make small round balls of the mixed dough and set aside.
  • Carefully take each ball of dough and with your deft fingers pat them flat on the wet kitchen towel. This helps flatten the dough without sticking to the surface, invert the paper towel on to your palms once done patting the dough and gently place them on the hot dosa pan.
  • Turn sides once cooked so they are cooked uniformly on both sides. One may spray oil on the pan before placing the Akki Roti to easily remove it from the pan.
  • Serve hot with a dollop of butter on top. Makes it delicious !
  • You may serve it with a  spicy chutney or curry or eat it plain, either way it makes for a yummy quick breakfast ! Enjoy!
