Pineapple Salsa

Summer days are upon us, the need to eat some crispy fruity salsa anytime of the day did not seem like a bad idea either. Light, easy to make & healthy all pointed towards making this salsa over the weekend, for the work week ahead. The last time, I was at the fresh fruit stand had picked up a pineapple which turned out to be deliciously sweet,


after devouring the slices saved some for the quick & easy salsa and stored it in the refrigerator for an evening snack when we get home……..refreshing, indeed!

Ingredients :

Pineapple chunks – 2 cups

Red Onion- 1 ( large finely sliced)

Roma tomatoes- 2 (cubed)

Bell pepper (green) – 1 finely sliced

Cilantro- 1/2 a bunch

Fresh Lime- 1 (juice squeezed)

Black Pepper powder – 1 tsp ( adjust a required)

Salt – a pinch (optional)



Mix all the above together in a mixing bowl, refrigerate & serve cool on a hot summer day. Nothing tastes better than a fruity salsa 🙂
