BAKED CHICKEN DRUMSTICKS
Had some DIY projects lined up on the “To Do List” before summer ended, what better way to go ahead with your projects, while your chicken is marinating ??A quick & easy, no fuss recipe,perfect for busting up the usual chicken routine, so I mixed all the ingredients, rolled the cleaned chicken drumsticks into the masala/marinade,placed it in a ziplock bag & set it in the fridge, while I went about my work.After a few hours took it out of the refrigerator & placed it in the oven & Lo! the chicken drumsticks are piping hot & ready to be savored…all good after a good day’s work.More DIY projects ?? I say, bring it on ! 🙂
1.Chicken drumsticks- 8-10 pieces ( with skin or you can skin it before coating with marinade, some prefer to leave it on,once it’s baked it’s easier to peel it off like socks they say, either way your preference)
2.Crushed Paprika or Red Chili powder- 1 1/2 tbsp
3.Freshly ground Pepper- 1 tbsp
4.Cumin/Jeera powder- 1 tsp (preferably dry roasted & freshly ground like the pepper corns too)
5.Turmeric powder- 1/2 tsp
6.Garam masala- 1 tsp
7.Ginger garlic paste- 1 tbsp
8.Soy sauce- 1 tsp
9.Salt- to taste
10.Lime juice- 1 tbsp ( optional)
1.Mix all the ingredients together & coat the cleaned chicken drumsticks in the mixed masala/marinade.
2.Pour the contents into a ziplock bag & place it in a tray & leave it in the fridge for a few hours ( minimum 4 hours , maximum overnight)
3.Let the chicken absorb the marinade flavor well & mix with the juices ( one might even poke the chicken with the fork, to let the juices seep in well)
4.Now forget all about it & go on with your daily routine, unless you are very hungry & have not planned your meal right, there is no need to disturb the marinating chicken.
5.When you & the chicken are ready after a few hours, preheat oven at 350 degrees for 8- 10 minutes, while you place the marinated chicken on a baking tray lined with aluminum foil & coated with cooking oil .
6.Now gently place the chicken drumsticks one by one making sure there is enough space between each piece.
7.Place it in the oven & let it bake for 10- 15 minutes , when it’s brown & crusty on one side gently pull the tray out & turn the chicken side over, using tongs & place it back in the oven for another 10- 12 minutes. At this point , you might want to baste the chicken with the left over marinade if any, for added flavor, before placing it in the second time.
8.When the other side is baked & crusty, pull the tray out of the oven, wrap the bone in foil, serve hot with a squeeze of lemon on top.

1.For those of us, who prefer their chicken glossy, you can use honey in the mix too, to glaze the chicken when it comes out of the oven, either way it tastes yummy 🙂
2.The soy sauce was added to just give a twist to the regular recipe, you can skip it if you prefer it soy- less !
