Glazed Honey Lime Sriracha Chicken
Sweet, tangy, spicy finger licking good !! …yup, that’s” Glazed Honey Lime Sriracha Chicken” for you. The bright red Sriracha sauce is a spicy versatile sauce which is made from red chili peppers, garlic, vinegar, salt, and sugar. The sauce is hot and tangy with just a hint of sweetness, which sets it apart from your garden variety hot sauces. It has multicultural roots & is supposed to have been introduced by a Vietnamese who moved to the United states in the late 80’s, wanting to bring the flavor of home to the country he migrated to, he created this sauce using various ingredients & named it after the small town Sriracha in Thailand…Now, this sauce is taking the culinary world by storm.It has been used in soups, sauces & Bloody Mary’s alike, the taste being addictive.
Ever since I tasted this sauce at a friend’s who made Sriracha cauliflower stir fry, I have been wanting to try this sauce with chicken.The most popular brand manufactured in the United States is by Huy Fong Foods,so I had grabbed a bottle of this sauce last week,wanting to experiment…this evening seemed like the perfect day to try.Temps in the low 80’s, you want your protein, but not in heavy curries, more like in bite size pieces…thus my Glazed Honey Lime Sriracha chicken was born.Recipe stored in my memory for more grilling outdoors in summer,perhaps with chicken drumsticks or chicken thighs ( for this one, I used chicken breasts) but honestly chicken is just the medium that carries the flavors of this delicious “rooster sauce” as it’s popularly called.
Chicken breasts- 4 ( cut into bit size pieces)
Sriracha sauce-3 tbsp ( go easy on the sauce, if you can’t take spicy, or balance it with honey)
Honey- 2 tbsp or more ( according to one’s preference of sweet over spicy & tangy)
Soy Sauce- 1 tsp ( this gives that rich mahogany color)
Onion- 1 big,sliced fine( optional)
Ginger Garlic paste- 1tsp ( one can use fresh ingredients too)
Salt- to taste
Lime juice- 2 tsp or squeeze one fresh lemon
Oil spray or 1 tbsp of Coconut Oil
1.Warm oil in a saute pan, then add the finely sliced onions & sauté it till it turns golden brown.Now add the ginger garlic paste & stir it for a few minutes till the raw smell disappears.
2.To this add the cut chicken pieces & let sit for a few minutes till they turn tender in medium heat.Then stir.
3.Meanwhile in a bowl mix the Sriracha sauce, Soy sauce & honey together & set aside.
4.When chicken is partially cooked , pour the sauce mix in & stir them together, keeping the lid covered till it’s well cooked.Do not add any water, since chicken liberates it’s own water, you might want to remove the lid after sometime, so the water evaporates fast.
5.Squueze lemon/lime juice once the preparation turns dry, add salt to taste
6.Garnish with cilantro/spring onions/chives & serve hot .
This can also be used as a starter.
Note: If you are grilling then you can brush both sides of the large chicken piece ( chicken thighs or chicken drumsticks with the Sriracha , honey, soy sauce,& lime juice mixture, while you flip occasionally until golden & sticky).If cooking on the stove top, follow the above method,quick & easy both ways smile emoticon
