Cucumber Pancakes / Thekkare Dosa
The heat index is in the 80’s today, a few weeks ago we would never have thought we would complain about the ‘sweltering heat’ but here we are, gently feeling the heat wave….one thing is certain,Mother Nature is off her meds again 🙂 last night was hailstorm, today a heat wave…either way it’s time for cucumbers in the dish again! What better way to beat the heat? so here I am making another traditional Mangalorean ( a city in South India) dish,which is a summer time treat and is usually eaten with home made butter.
Rice- 3 cups
Cucumber- 1 ( peeled & diced)
Coconut gratings- 1 cup
Beaten rice/Bajeel/Poha- 1 handful
Jaggery- 1/2 cup
Salt – to taste
1.Soak rice for an hour, grind it with coconut,beaten rice, cucumber and jaggery to a fine paste.Do not add water while grinding, since the cucumber releases enough water for the batter to contain enough liquid.
2.Cover the batter with a lid and let it ferment for 3-4 hours.
3.Then heat a griddle on the stove top, apply a little oil and pour a ladle full of batter on to the griddle in a circular motion, the shape of a pancake/dosa.
3.Pour a teaspoon of ghee or butter along the edges, to make it easier to flip the sides and it also aids in the taste.
4.Serve hot with home made butter or store bought one.
Note: This Cucumber pancakes/Thekkare dosa can be had as an evening snack or for breakfast,healthy, yummy and delicious summer time treat. Enjoy!
