Spring is here!! (yes, this weekend wink emoticon ) Sshh…Sshh!!, if we speak loudly it might snow again grin emoticon grin emoticon.Holding on to holy sunshine with both hands & tuning into the bird song.
A beautiful long weekend, with lots of sunshine calls for some treats, what better way to be outdoors with a picnic basket filled with Spring time Strawberry cupcakes and other treats.The farmers market is in full swing with the brightest colored berries in town, I picked myself a few of the berries,these strawberries seemed so juicy & sweet, hence wanted to use them in my Easter weekend cupcakes.Each little cupcake emerges through the Spring air smelling of fresh berries & sweet butter like little flowers poking through the soil miraculously in Spring,putting some spring back into my kitchen after the dreary cold long winter.Celebrate Spring with the cupcakes evocative of the season!

Strawberry Cupcakes

Ingredients:
Strawberries- 14-15 (pureed)
Self raising flour/All purpose flour/Maida- 1 and 3/4 cups
Brown Sugar- 3/4 cup
Baking soda- 1 tsp
Salt – a pinch
Egg- 1
Vanilla Extract- 1tsp
Vegetable oil/Butter – 1/2 cup

Method:
1.Mix the flour, sugar, baking soda& salt together & set aside.
2.Now in another deep bowl add the oil/butter, vanilla extract, egg & beat them together, then add the strawberry puree to the mix.Now gently add the dry mix to this & beat them all together.(I used a hand held egg beater so it mixes uniformly, one can use any regular egg beater, as long as the mix is homogenous , it works fine)
3.Now spoon in the batter into previously set cupcake cups placed in the muffin tray.Make sure they are 3/4 filled & not filled till the top, since they will “runneth over”
4.Preheat the oven at 350 degrees for 10 minutes, before loading in the muffin tray containing the cupcake batter.
5.Bake about 20 -25 minutes, check with a toothpick or skewer to see if it comes out clean on poking,( which means the cakes are completely baked).Remove from oven, set it on a cooling rack to cool & then serve to the little ones or load a picnic basket along with other goodies & enjoy your weekend basking in the sunlight smile emoticon
Note: One can use any frosting on top, to welcome the season .Enjoy!
