SWEET POTATO PIE
“Help us celebrate this never ending number ( 3.14159….) on the World Pi Day” boomed the news telecaster’s voice, two days ago on the TV….like we needed a reason to celebrate with food !! Stored the information in my memory bank, promising to do just that over the weekend, visions of my Math teacher loomed large in my mind,Oh! that dreaded Pi !!! But,now there is always, an easy way to celebrate,just shift your focus and add another “e” it becomes a whole delicious dish altogether.Remember “NEVER to feed your fears !!! ” smile emoticon
Having never been around Pie making in my growing up years, this was a total new experience for me, but I was willing to give it a try and the result a wee bit of the Pie is remaining after suggesting that my kids & his friends can have brunch before we planned a small picnic outdoors.Yes,forever the “humble pie” grin emoticon
Everyone is talking about health foods these days,so I picked up my share of sweet potatoes from the fresh market, a week ago, having no idea what I would do with them, except boil & eat them like we did as kids.This morning, as I was planning to make a pie,the sweet potatoes caught my eye and here I am with this yummy sweet potato pie,topped with mini marshmallows in the shape of Pi,to be a part of the global celebration, so what if I am a little late in joining the party,Math never came easy wink emoticon
So enjoy this sweet & spicy pie with your loved ones,over the weekend.
Sweet potatoes- 2 large
Brown sugar- 1 cup
Milk- 1/2 cup
Butter- 1/2 stick
Ground Nutmeg powder- 1/2 tsp
Ground Cinnamon powder- 1/2tsp
Pure Vanilla Extract- 1 tsp
Mini marshmallows- a handful( to decorate on top)
1.Boil the sweet potatoes till soft, in a bowl of hot boiling water, then set it aside to cool, after peeling the skin under cold running water.
2.Meanwhile in another deep mixing bowl add all the other ingredients & gently beat them together on medium speed.
3.Now add the cooled sweet potatoes to the mix & gently whip them together once more.
4.When they are uniformly mixed, pour them into a pre-made unbaked pie crust tray.Decorate with mini marshmallows on top.
5.Bake at 350 degrees F ( 175 degrees C) in a preheated oven( preheat for 10 minutes before placing the filled pie crust) for 50-60 minutes,until the fork inserted in the center comes out clean and the marshmallows are browned on top.
6. The pie will puff up in the beginning and gently sink down as it cools.

Thought I’d just add in a quick refresher for those nerdy ones who loved math in school & for those of us who only liked them as food….crunch it as you wish
