Spinach Cream Soup

Winters are for soups.The easy way to drop a few pounds is go on a diet of only soups is what I have heard time & again, yet when you drive through the crazy traffic & weather conditions, diet is the last thing on your mind…you come home ravenous.So somehow the soup making has been taking a back seat, for a while now, until last evening when the school nurse called to say my kid was unwell, with possibly a case of stomach flu. My parent mode kicks in,as I rush from work , to pick up my kid from school, my mind is racing with a million things, somehow the soup found its way into the healthy diet at a time like this when solid food lost its magic.
Needless, to say my kid was feeling weak & tired & has his own diet plans, like a pet, he goes on no food for the next 12 hours, I let him be since we all have our own modes of healing you see.This afternoon, when he felt a little better, I thought I’d make this Spinach cream soup, which would help him recover from his stomach flu, which seems to be doing its rounds in the school now. Maybe, on second thoughts, it might actually help my latent diet plan to get started too
The Spinach cream soup is a healthy way of providing your body with the iron supplement and who would not like a creamy soup on a cold winter day ? So enjoy your Spinach cream soup with bread crumb topping.

Spinach Cream Soup

Ingredients:
1.Butter- 2- 3 tbsp
2.Onion- 1 ( medium)
3. Fresh Baby Spinach- 3 cups
4.Chicken stock or water-2 cups
4.Salt – to taste
5.Powdered BlackPepper- 1/2 tsp
6.Cream/Thick Milk- 3/4 cup

Method:
1.In a thick bottomed vessel, heat the butter, once its warm add the finely sliced onions & sauté it to a light brown.
2.To this add the clean & washed baby spinach & stir it till its wilted.
3. Now, to the spinach add the water or chicken stock, along with salt & pepper and bring it to a boil.Once it boils, simmer it for 10- 15 minutes.
4.Take it out of the heat , wait for a few minutes before you run it in the blender for a partially coarse blend.
5.Return to pan & whisk it well with cream or milk .Simmer for another 10-15 minutes, so the flavors blend, check for salt & pepper taste, if required add some & remove from heat.
6.Serve hot with a squeeze of lemon .
