The first time I ever tasted a Tangerine( yes, those yummy , sweet,small cuties) was when I was expecting my kid.The color & the size of these cuties just drew me to them, am not sure if it was a pregnancy craving with its sweet tartiness, all I know is from that point forward after relishing these “cuties” I was singing so loudly in the car with the windows open and couldn’t care less if somebody noticed.Yes, these tangerines bring in sunshine into your life & certainly put you in the “tropical mood”.This morning woke up to bright sunlight, with birdsongs outside my window,the weather is getting warmer finally and it certainly is a time to rejoice after the cold cold winter, what better way than put some sunshine into your food too.
Tangerines belong the mandarin family of citrus fruits and are rich sources of Vitamin C, the Chinese believe it is a good luck symbol so have them around during their new year, me, I just love the color it brightens up any spot that needs some light inside you, so here it is “Tangerine Chicken” to Spring clean your body & soul to brighten up your insides .
Chicken – 1 ( cut into small pieces according to preference)
Onion- 1 ( big- finely sliced)
Garlic – 7-8 ( crushed )
Turmeric powder- a pinch
Black pepper powder- 2 tsp
Chili powder- 1 tsp
Tangerine juice- 1/2 cup
Soya sauce- 2 tsp
Honey- 1 tbsp
Rice vinegar- 2 tbsp
Salt- to taste
Oil- 2 tbsp
Spring Onions- to garnish
1.Heat oil in a wok, to this add the sliced onions & saute them till light brown.
2.Now add the garlic & fry them till the raw smell of garlic disappears .
3.Then add the clean & cut chicken pieces & keep stirring till they are half cooked while adding turmeric powder, chili powder , black pepper powder & salt to the mix.Cover with lid & allow the chicken to cook in its own steam.
4.Sprinkle ginger jullianes on top of the mix, along with the rice vinegar.
5.Now add the tangerine juice to the mix & stir the chicken well so the juice seeps into the chicken well and allow it to cook.
6.Next add the soya sauce to the above along with the honey & stir it well together, the gravy slowly starts to thicken & glaze the chicken.Let it cook for a few more minutes.
7.Remove from heat & garnish with Spring onions, serve hot with any flat bread or rice.Enjoy a touch of sweet & tartiness in your Tangerine chicken, along with the aromatic spices.
