Its raining outside,after a week of almost summer heat…felt like an aromatic spicy dish,what better than the Prawn Mint Pulao,which is quick & easy & satisfying too.The mint & the spices bring out the aroma in the appetising Prawn Pulav.Enjoy.

Prawns- 20 medium /large ones
Basmathi rice-2 cups
Mint leaves- a bunch/5 twigs
Onions-2 medim size
Oil- 2 tsp
Ghee-1 tsp(optional)
Cardamom- 3
Bay leaf- 1
Turmeric powder-1/4 tsp
Garam masala powder-1 tsp
Coconut milk – 2 cups
Salt- to taste

To Grind:
Green chillies- 5
Coconut shredded -3 tsp
Ginger garlic paste 2 tsp
Mint leaves

1.Clean the rice & soak it in water for 10 minutes, drain water & set aside.
2.In a wok,heat oil & ghee ,when its warm add the cloves, cinnamon, cardamom & bay leaves.When they splutter add the finely sliced Onions & saute it for a few minutes.
3.Add Turmeric powder,garam masala powder & the cleaned prawns to the above Onion mix & saute it for a while till prawns turn soft,now add the ground paste with little water to the prawn mix & allow it to cook for 10 minutes with lid closed after adding salt to taste.
4.Finally add the rice to the above mix, making sure all the ingredients are blended in with the rice.
5.Add 2-3 cups of coconut milk to the rice & pressure cook for 3 whistles.
6.Serve hot with Raitha.
