Spinach is an edible green flowering plant which gained popularity since it is the only vegetable available in early spring,when the snow stops and birds begin to chirp.It is believed that it moved from Persia through Arab traders to India,where it is almost used on a daily basis.Slowly through trade ways it found its way to Europe,France & Spain.It is mostly available in the United States as baby spinach grown domestically.
Spinach is rich in Iron,calcium & folic acids apart from the various Vitamin content in them.Owing to this,the use of spinach in food aids in digestion,curbing over eating.It also maintains low blood sugar and aids as a cure in constipation.
This is a very simple recipe made of Spinach & rice,which can be used as a variation in a daily meal.
Spinach-2 bundles/Baby spinach-1 packet
Oil- 2 tsp
Mustard seeds- 1/2 tsp
Cumin seeds/Jeera-1 tsp
Garlic pods- 2 (finely cut)
Green chillies 5-6
Onions- 1 (medium-finely sliced)
Turmeric powder-1/2 tsp
Chilli powder-1/2 tsp
Garam masala- 1/2 tsp
Bassmathi Rice-2 cups
Water 4 cups
Salt- to taste
1.Wash & soak the rice for 10 minutes before cooking.
2.Heat oil in a pressure cooker,to this add cloves, garlic,mustard seeds& jeera.Allow them to splutter.now add the bay leaf.
3.Add the green chillies, when they splutter add the onions.Saute till they turn light brown, now add the turmeric powder, garam masala & chilli powder & stir them all together.
4.Now add the baby spinach or finely cut spinach & saute for a few minutes till they loose moisture.
5.Now add the washed, cleaned & drained rice to the above & fry it for a few minutes.
6.Add the water to the rice & mix all the ingredients together with salt to taste,& pressure cook the rice till you hear 3 whistles.
7.Remove & serve hot with yogurt or any raitha.
