PINEAPPLE METHI DHAL CURRY

This weekend has been dull & cloudy,wanted to color a Saturday afternoon bright & cheerful with a splash of happy yellow,so tried this new combo.Methi leaves which are great cure to stomach ulcers,when added fresh in almost every meal,the pineapple apart from its cheerful color & yummy taste also has a high content of manganese which promotes bone growth.It is also supposedly good in curing sinusitis, sore throat etc.I tried this combo with our regular comfort dhal & yes indeed it was a new flavor with a twist .
Ingredients:
Fresh Methi leaves-1 bunch
Pineapple pieces-8-10
Thuvar Dhal – 1/2 cup
Onions- 1 medium(finely sliced)
Green chillies-3
Cilantro- 1/2 bunch
Asafoetida?Hing- a pinch
Oil-2 tsp
Mustard-1/2 tsp
Cumin seeds/Jeera- 1 tsp
Turmeric powder-1/4 tsp
Sambar powder-1 tbsp

Method:
1.Wash & clean Thuvar dhal & add 3 cups of water,along with a few onion slices,turmeric powder,a little oil,green chillies, sambar powder,asafoetida/hing,Coriander leaves/Cilantro finely chopped & pressure cook it for 4-5 whistles.
2.Now in a separate kadai,add a little oil,when its warm season with mustard seeds,jeera/cuminseeds,then add the methi leaves & saute it for a while till they loose water & shrink, now add the rest of the onions, saute for a few minutes, then add the pineapple pieces & saute for a few minutes.
3.Now pour in the cooked Dhal mix into the sauted pineapple methi mix,add salt to taste & keep covered for 10 minutes for all the ingredients to cook and the flavor to spread.
4.Serve hot with simple regular rice.

Note: Kids love the taste of Dhal more since its flavored with pineapple & whats more its nutritious too:)
