Zucchini-2(medium size-shredded fine)
Oil- 2 tbsp
Cumin/Jeera seeds- 1 tsp
Bay leaves -1-2
Basmathi Rice-2 cups(presoak for 10 minutes)
Water- 4 cups
1.Heat oil & butter in a thick bottomed vessel or pressure cooker,to this add the cumin/jeera & mustard seeds.Let them splutter then add the bay leaves & red chillies
2.To this now add the shredded Zucchini & saute for a few minutes till Zucchini turns golden yellow.
3.Now add the cleaned presoaked Basmathi rice to the above mix & stir them all together gently frying the rice without breaking it.
4.Now add water to the above with salt to taste & pressure cook rice for 2-3 whistles.
5.Serve it hot with any spicy curry/baked fish etc.
